Ice Wine, also known as Eiswein in German, is a premium sweet wine produced from naturally frozen grapes and represents one of the most geographically distinctive and limited categories within the global wine industry. Unlike conventional wines, Ice Wine grapes are not harvested immediately after reaching maturity. Instead, grapes remain on the vines through winter and undergo natural freezing under suitable climatic conditions. When harvesting temperatures typically fall below approximately -8°C, water inside the grapes forms ice crystals, which are separated during pressing. This process naturally concentrates sugars, acidity, aromatic compounds and flavor components, resulting in a wine characterized by high sweetness, balanced acidity, intense aromas and a distinctive flavor profile.

The value of Ice Wine is primarily derived from its unique natural freezing process and strict climatic requirements. Since grapes must undergo natural freezing rather than artificial freezing, production is limited to a small number of wine regions with stable winter temperatures and predictable frost conditions. Major production regions include Ontario, Canada, traditional German Eiswein regions and cold-climate areas in Northeast China. Ontario is the world's leading commercial Ice Wine production region, supported by mature vineyard management, harvesting systems and winery infrastructure. German Eiswein is recognized for traditional production methods and premium Riesling-based products, while Chinese regions such as Tonghua, Ji'an and Huanren have developed specialty Ice Wine industries based on their cold climate conditions.

From a production perspective, Ice Wine involves significantly higher risks and lower yields compared with conventional wine. Ice Wine grapes typically remain on vines for several additional months after ripening and are usually harvested between December and January when suitable freezing conditions occur. Production depends heavily on weather conditions, as grapes may be damaged by insufficient frost, snowfall, spoilage or wildlife before harvesting. Once suitable temperatures are reached, wineries must complete harvesting within a limited time window. In addition, Ice Wine has low raw material efficiency: producing a 375ml bottle generally requires approximately 3-4 kilograms of grapes, while the same amount of grapes can produce approximately six to seven times more conventional dry wine, creating strong scarcity and premium pricing characteristics.

Ice Wine is mainly produced from cold-resistant grape varieties with high sugar accumulation capabilities, including Vidal Blanc, Riesling, Cabernet Franc and Cabernet Sauvignon.
