概観
Scope of the Report
The global Edible Fungus market size is predicted to grow from US$ 88,740 million in 2025 to US$ 113,892 million in 2032; it is expected to grow at a CAGR of 3.7% from 2026 to 2032.
Edible Fungus refers to commercially traded fungal fruiting bodies and their basic food-grade processed forms, including fresh, dried, frozen, canned, salted, and other simple processed mushrooms and fungi used for human consumption. Edible Fungus links low-carbon agricultural production, plant-forward diets, foodservice menus, packaged-food formulation, and specialty gourmet demand. The market is unusually broad: mass cultivated mushrooms such as shiitake, wood ear, oyster mushroom, button mushroom, and enoki coexist with higher-value fungi such as maitake, king oyster, bunashimeji, morel, porcini, matsutake, and truffle.
The upstream chain of Edible Fungus is agricultural rather than chemical. It depends on spawn, substrate materials such as sawdust, straw, corn cob, bran, cottonseed hull, manure-based compost, controlled-environment growing rooms, packaging materials, energy, water, and cold-chain handling. The industry also uses fermentation control, strain selection, humidity control, air exchange, and post-harvest grading, but the traded product in this report is the edible fungus itself, not spawn, growing bags, cultivation systems, or foodservice markup.
Downstream demand is led by household retail and foodservice. Household retail includes supermarkets, wet markets, community retail, and online grocery channels selling fresh or dried mushrooms for home cooking. Foodservice includes restaurants, hotpot chains, hotels, institutional catering, and central kitchens. Packaged food demand covers canned, frozen, salted, and ready-to-cook mushroom products. Industrial food ingredient demand includes mushroom powders, extracts, concentrates, frozen diced mushrooms, and umami ingredients used by food manufacturers. Specialty gourmet demand includes premium wild or cultivated fungi used by chefs, premium retailers, and gift channels. Procurement differs by channel. Fresh fungus is usually purchased under daily or weekly supply arrangements, regional distribution contracts, or seasonal framework agreements because quality and shelf life are critical. Industrial processors and food manufacturers more often use annual framework contracts, forward procurement, or specification-based purchasing. Public tenders are less central than in infrastructure or chemicals, but institutional catering and government-linked food procurement may use tender-like purchasing.
In the current market, global Edible Fungus production is around 61.5 million Metric Ton Fresh-Weight Equivalent, with an average selling price of about 1,475 USD per Metric Ton Fresh-Weight Equivalent EXW basis. Top 5 suppliers control approximately 2.2% of global revenue CR5. This very low concentration is structurally plausible because China accounts for the dominant share of world production, but Chinese supply is itself highly fragmented across factory farms, regional bases, cooperatives, and traditional growers. Outside China, the market remains regional: North America is anchored by large Agaricus and specialty mushroom growers, Europe by button mushroom and processing clusters, Japan by branded specialty mushrooms, Australia by large fresh mushroom growers, and the Middle East and Africa by smaller but increasingly modern local farms. Gross margin is estimated at 22.0% for a normalized producer, with higher margins for branded specialty fungi and processed ingredients, and lower margins for oversupplied fresh enoki or mass-market button mushrooms. Barriers come from biological yield control, contamination prevention, strain know-how, energy-efficient climate control, cold-chain execution, food safety certification, and stable retail or foodservice access.
During 2026–2032, demand should grow steadily rather than explosively. The main drivers are household protein diversification, hotpot and Asian cuisine expansion, packaged plant-based foods, clean-label umami ingredients, and controlled-environment farming. Regulatory pressure will center on food safety, pesticide residue control, traceability, waste handling, labor compliance, and energy consumption. Technology will improve through automated harvesting trials, AI-assisted climate control, strain screening, substrate optimization, and predictive disease monitoring. Cost pressure will remain a bottleneck because electricity, cooling, labor, packaging, and logistics can erase margins quickly, especially for fresh products with short shelf life. Carbon constraints may favor substrate recycling and local production near consumption centers, but energy-intensive indoor farms must improve efficiency to remain competitive.
