Scope of the Report
The global Food Grade Thermal Gel market size is predicted to grow from US$ 34.87 million in 2025 to US$ 56.83 million in 2032; it is expected to grow at a CAGR of 7.4% from 2026 to 2032.
Food Grade Thermal Gel generally refers to food-grade curdlan – a microbial exopolysaccharide β-1,3-glucan produced by pure-culture fermentation of glucose using strains such as Alcaligenes faecalis or related bacteria. It is a water-insoluble glucan that forms strong, elastic thermo-irreversible or thermo-reversible gels when its aqueous suspension is heated.
Upstream, the key inputs are food-grade glucose or other starch-derived sugars (mainly from corn or cassava), nitrogen and mineral nutrients for fermentation, specific curdlan-producing strains, and bioreactors plus downstream drying and milling equipment. Downstream, food-grade thermal gel is positioned as a high-performance gelling agent, stabilizer, texture modifier and water-binder in processed meat products, surimi and fish balls, noodles and pasta, tofu and soy products, bakery and fried foods, frozen ready-meals and low-calorie foods.
In 2024, global sales of food grade thermal gel reached approximately 2,889 tons, with an average global market price of around US$11,376/ton. Production capacity varies significantly among manufacturers, with gross profit margins ranging from approximately 25% to 50%.
Food Grade Thermal Gel sits at the intersection of microbial polysaccharides and clean-label texturizing systems, and its market outlook is shaped by several structural demand shifts. As consumers move toward higher-protein, lower-fat and plant-based diets, food formulators look for gelling agents that can deliver firm, elastic and heat-stable textures without animal-derived components or synthetic additives. Curdlan-based thermal gels provide exactly this combination: strong gel strength under high-temperature processing, excellent water retention and freeze–thaw stability, and compatibility with meat, seafood and cereal matrices. In processed meat analogues, surimi, noodles, tofu and frozen ready-meals, formulators increasingly use thermal gel either alone or in blends with carrageenan, starch and other hydrocolloids to fine-tune bite and juiciness, which underpins a steady expansion of its application base.
From a regional perspective, Asia–Pacific acts as both the production and consumption hub. China hosts several of the largest curdlan producers with dedicated food-grade lines, and Japanese pioneers still influence high-end specifications and application know-how. In this region, thermal gel is already well integrated into mainstream categories such as noodles, dumplings, benefiting from supportive food-additive regulations and a mature hydrocolloid supply chain. Outside Asia, penetration is more selective: adoption is strongest in frozen convenience foods, canned or retortable meals and plant-based meat products, where manufacturers value the ingredient’s heat stability and label friendliness. As global hydrocolloids portfolios are consolidated under large ingredient companies, Food Grade Thermal Gel is gradually being positioned as a premium niche within broader texture-system offerings rather than a stand-alone commodity.
At the same time, the market faces clear constraints and evolutionary trends. Its cost per kilogram remains materially higher than long-established hydrocolloids such as xanthan gum or carrageenan, and awareness among smaller food processors is still limited, which narrows use mainly to mid- to high-end products and large industrial users. Fermentation yield, glucose prices and energy costs all affect profitability, creating sensitivity to raw-material and utility swings. Looking ahead, process intensification in fermentation, use of by-product sugar streams and integration with other hydrocolloid systems are expected to gradually lower unit costs and broaden the range of viable applications. Parallel advances in plant-based meat, high-protein snacking and functional foods create natural growth corridors for Food Grade Thermal Gel, especially when combined with positioning around dietary fibre content and “free-from” attributes (allergen-free, non-GMO, animal-free). Overall, the market is likely to evolve from a technology-driven niche toward a strategic texture platform ingredient embedded in multi-component systems offered by major specialty ingredient suppliers.
