Blanc de Blancs Champagne is a white quality sparkling wine produced within the legally delimited Champagne appellation in France exclusively from one or more authorised white grape varieties and made in accordance with the appellation rules through secondary fermentation and maturation in glass bottles. Chardonnay is overwhelmingly the principal grape, although limited-production cuvées may also incorporate Arbane, Petit Meslier, Pinot Blanc, or Pinot Gris.
The finished product is a clear, pale-straw to golden liquid, normally packaged in a pressure-resistant glass bottle. Its liquid matrix consists principally of water, alcohol, organic acids, residual sugar, dissolved carbon dioxide, and aroma compounds derived from grapes, fermentation, and yeast autolysis. Once the bottle is opened and pressure falls, dissolved carbon dioxide is released as fine, persistent streams of bubbles.
Production normally comprises gentle whole-bunch pressing, juice clarification, primary fermentation into still base wines, blending by vineyard origin and year, bottling with sugar and yeast, secondary fermentation in the sealed bottle, maturation on the lees, riddling, disgorgement, dosage, corking, and final packaging. During secondary fermentation, yeast converts sugar into alcohol and carbon dioxide. Because the bottle is sealed, the gas remains dissolved in the wine; after opening, depressurisation produces effervescence. The subsequent decomposition of yeast cells during lees ageing contributes bread, toast, pastry, and creamy sensory characteristics.
