Milk is considered a source of protein worldwide. Globalization accelerated the growth in dairy trade as more milk is demanded by countries that were not able to produce locally e.g. in Asia, MENA and Latin America.

Currently, Nestlé is the largest dairy company in the world in terms of sales value, which sources over 12 million tonnes of fresh milk equivalents from over 30 countries. The company buys more than half of its milk locally as fresh milk (7 million tonnes per year).

2 . Current Dairy Market Scenario

Production and Consumption (Cow Milk)

The countries with the highest volumes of cow milk production in 2019 (est.) were European Union (155.3M tonnes), the U.S. (99.1M tonnes) and India (91.3M tonnes), with a combined 47% share of global production. The countries with the highest volumes of cow milk consumption in 2019 (est.) were India (77.6M tonnes), the European Union (33.4M tonnes) and U.S. (21.7M tonnes), with a combined 70% share of global consumption.
 

Production and Consumption (Cheese)

The European Union remains the largest global exporter of cheese ( 870,000 tons) with about a quarter of its exports shipped to the United States and Japan. The countries with the highest volumes of cheese production in 2019 (est.) were European Union (10.27M tonnes), the U.S. (5.9M tonnes) and Russia (0.9M tonnes), with a combined 82% share of global production. The countries with the highest volumes of cheese consumption in 2019 (est.) were European Union (9.45M tonnes), the U.S. Union (5.74M tonnes) and Russia (1.21M tonnes), with a combined 80.8% share of global consumption.

All is not well

Consumer attitudes towards dairy products are changing around the world. Once used as a necessary part of a balanced diet, consumption of dairy products in some of the categories are consistently declining over the past few years. Today's consumers, particularly in developed countries are more concerned over allergies, hormone use and perceived malaise of certain dairy products. Consumers are gradually shifting to plant-based beverages and other products made from soy, rice, nuts, and oats. Particularly in the U.S. as the alternative milk is ascending, cow milk sales are dropping. In the last four years, sales of nondairy milk have risen 23%. The popularity of alternative dairy products forces dairy farmers to shut down their business. According to Civil Eats, in New York State alone, 1,600 dairy farms went out of business from 2006 to 2016, with dozens more closing so far in 2018.
 
The declining consumption of milk coupled with rising milk prices has put the dairy industry in debt. In November 2019, America's largest milk producer, Dean Foods, filed bankruptcy. The company struggled to attract/retain consumers who have instead turned to nondairy milk or private-label products. On the same line in January 2020, Borden Dairy Company, one of America's oldest and largest dairy companies, also filed for bankruptcy. Montreal-based dairy giant Saputo Inc. will close sites in Trenton, Ontario and St. John, New Brunswick in 2021 and integrate them into other facilities in Canada in an effort to improve operational efficiency.
 

Closing Words

I think the marketing of dairy products should be given special attention. Non-dairy companies have benefited very well from the adulteration of milk and its side effects on health. Now it is the turn of dairy companies to promote the qualities of milk in a better way. Cow's milk is actually a nutritious drink (only lactose intolerant should avoid) if one can drink cow's milk there are innumerable benefits. Bundled with nine essential amino acids, quality protein, calcium, vitamin D, phosphorus and magnesium, cow's milk is essential for strengthening the immune system and repairing damaged cells and tissues.
 
In the prevailed circumstances dairy business cannot be run as a usual business. Stakeholders (Government, Society, Processors, and Farmers) must act swiftly before nondairy products take the industry for a ride. Farmers and dairy companies should diversify their products and geography. Value-added dairy products such as cheese may be a large market in Asian countries where cheese consumption is relatively low compared to other parts of the world.
