The product is generally dominated by insoluble dietary fiber, while purification and modification processes can increase total dietary fiber content, soluble fiber proportion, water-holding capacity, swelling capacity, dispersibility, and processing stability, while reducing the coarse texture, bitterness, and color impact associated with untreated tea residue. This study focuses on tea residue-derived dietary fiber ingredients used in dietary supplements, meal replacement and nutrition powders, bakery products, cereal foods, and other high-fiber food products.
