Blanc de Noirs Champagne is a white sparkling wine produced within the legally delimited Champagne appellation in France exclusively from black-skinned, white-fleshed grape varieties and made under appellation rules through secondary fermentation in the bottle. Its principal raw materials are Pinot Noir, Meunier, or a blend of the two, without white grape varieties. The finished product is normally a clear, pale-straw to golden liquid packaged in a pressure-resistant glass bottle. Carbon dioxide generated naturally during fermentation remains dissolved in the wine and produces fine, persistent streams of bubbles and foam after opening.

The product has no solid layered structure. Its liquid matrix consists of base wine and, where applicable, reserve wines, together with alcohol and carbon dioxide produced during secondary fermentation, residual sugar, organic acids, phenolic compounds, and aroma constituents. Production requires rapid, gentle whole-bunch pressing and minimal contact between the juice and grape skins to prevent red pigments from colouring the must. The process then comprises clarification, primary fermentation, blending, bottling with yeast and sugar, secondary fermentation in the bottle, maturation on the lees, riddling, disgorgement, dosage, and final corking. Yeast converts sugar into alcohol and carbon dioxide; the sealed bottle retains the gas in solution, which becomes effervescence when pressure falls after opening.
